Ingredients
1rack of baby back ribs
⅓cupsweet chili sauce
⅓cuplime juice
⅓cupsoy sauce
2tablespoonsfish sauce
3clovesgarlicminced
1"piece piece of gingerminced
¼cupcrushed peanuts
¼cupbasilchopped
1jalapenosliced thin
Instructions
1: Salt the ribs on both sides about 1-2 hours prior to cooking.
2: Preheat the oven to 350 degrees.
3: Put the ribs on a sheet pan with 2 cups of liquid… water or vegetable broth. Cover with foil and bake for 2 hours.
4: Remove from the oven, remove the foil, and let cool completely for 1 hour. Cut the ribs apart once cooled.
5: Meanwhile mix the glaze by whisking together ginger, garlic, soy sauce, lime juice, fish sauce, and sweet chili sauce. Drizzle about ¼ of it onto the ribs.
6: Fire up your grill on high heat. Add the ribs to the grill and brush more of the glaze on all sides. Cook 2 minutes on all four sides until nice and caramelized. Brush more glaze on if needed. You should be left with about ¼ cup of sauce to serve.
7: Arrange ribs on your serving platter, top with peanuts, jalapenos, and basil.
