  • 1 rack of baby back ribs
  • cup sweet chili sauce
  • cup lime juice
  • cup soy sauce
  • 2 tablespoons fish sauce
  • 3 cloves garlic minced
  • 1" piece piece of ginger minced
  • ¼ cup crushed peanuts
  • ¼ cup basil chopped
  • 1 jalapeno sliced thin

  • 1: Salt the ribs on both sides about 1-2 hours prior to cooking.
  • 2: Preheat the oven to 350 degrees.
  • 3: Put the ribs on a sheet pan with 2 cups of liquid… water or vegetable broth. Cover with foil and bake for 2 hours.
  • 4: Remove from the oven, remove the foil, and let cool completely for 1 hour. Cut the ribs apart once cooled.
  • 5: Meanwhile mix the glaze by whisking together ginger, garlic, soy sauce, lime juice, fish sauce, and sweet chili sauce. Drizzle about ¼ of it onto the ribs.
  • 6: Fire up your grill on high heat. Add the ribs to the grill and brush more of the glaze on all sides. Cook 2 minutes on all four sides until nice and caramelized. Brush more glaze on if needed. You should be left with about ¼ cup of sauce to serve.
  • 7: Arrange ribs on your serving platter, top with peanuts, jalapenos, and basil.

If you or someone in your family are allergic to peanuts, swap them out for cashews!
